I swear my husband begs me for Crock-Pot meals. He loves anything that cooks all day long (especially roast & potatoes! – or chicken & rice!). Maybe it’s the tender meat, or the fact that all the flavors combine and cook into each other. 🤤
My Crock-Pot is my best friend. Especially when I know I’ll be home late or too busy to cook around dinner time. Forgotten Chicken takes 10 minutes to whip up and drop in the Crock-Pot (and it’s a family favorite!) so it’s usually a go-to.
Another reason I love Forgotten Chicken and it’s speedy prep time is because I know if something comes up unexpectedly – I can still have dinner ready for my family when I get back home.
We’ve got our meat and starch cooking in the Crock-Pot. So I just have pop some veggies in the microwave or in a pot to steam and we’re good to go. Now I’ve got dinner in a flash and no more crying, cranky babies (husband included!).

Cook Time: 3-8 hours Servings: 4-6
1 lb boneless, skinless chicken breast
2 cans cream of mushroom soup
1 can cream of chicken soup
French onion soup mix
3 cups of minute rice
2 cups of water
Add soups, rice, and water in the Crock-Pot. Stir to combine.
Lay chicken on top of rice and sprinkle french onion soup mix on top. (See photos below!)
Cook in Crock-Pot on Low for 6-8 hours or High for 3-4 hours.
